The coffee produced at Finca Guadalupe Zaju is of high quality and is grown using anaerobic  fermentation process 2. The process involves using four anaerobic tanks, each with 12 bags per  batch capacity, for the fermentation process. The fermentation is carried out without water in the  tanks and takes approximately 60 hours. The temperature range during fermentation is maintained  between 18°C and 22°C 2. The resulting coffee has notes of cherry, chocolate, plum, stewed  fruit, and tropical fruit
