During harvest, ripe cherries are harvested and washed to remove mud, leaves and any other foreign materials. As this is a natural process, the cherries are then directly dried on concrete patio for 5 days, regularly turning the coffees over to encourage even fermentation and drying, subsequently the cherries are then moved to a greenhouse for final drying for 10 days, the greenhouse encourages a consistent environment for drying evenly. Throughout the drying period immature beans and foreign material are continuously removed. Cherries are dried to achieve an exportable coffee with 10.5% moisture content and then stored for export.
